This cocktail was created at the restaurant Rice Paper Scissors in downtown Melbourne Australia.
This cocktail is flavorful, lightly spicy, and very refreshing.
It was created to celebrate Margarita week, and the name was inspired by the wrestler Eddie Guerrero.
2 oz Tequila (infused with a poblano pepper)*
¾ oz Lime juice
½ oz Agave nectar syrup**
Shake all ingredients with ice.
Strain into a short glass over ice.
Garnish with a salt rim and a charred pineapple slice.
*Finely dice one fresh poblano pepper, and place all flash AND seeds into a bottle of tequila. Let steep for one week, then fully strain out the pepper.
**Dilute agave nectar with water, at a ratio of 3 to 1 respectively.
