For a brief time I was hoping to be part of the team to create and launch a program for a bar on an outer rim planet.  Of course there was one drink to make sure we got right.  Others thought that some sort of blue version of lesser drinks would be the answer.  I was hoping to take things in a more classic direction as well as making it delicious.  In my mind, this outter rim bar would have to have been a rum runners bar.  You know making that Kessel run would make a smuggler thirsty.  This would've definitely hit the spot.

Ingredients

2 oz Koloa Coconut Rum

¾ oz Giffard’s Blue Curacao

1 oz Lime Juice

½ oz. Orgeat

1 oz Heavy Cream

¾ oz Egg White

Instructions

Dry shake all ingredients to emulsify.  Add ice and shake to chill.  Double strain into chilled collins glass and let sit for at least one minute.  Once foam as set on top, slowly fill with chilled soda water by pouring directly down into the center.  Fill until the foam slightly rises up over the rim of the glass.
